Healthy Oven Baked Zucchini Sticks

The ultimate good-for-you snack

“Easy to prepare for your New Year’s Eve celebration!”

 

 

3 medium zucchini

¾ cup breadcrumbs (preferably whole wheat)

¼ cup freshly grated parmesan cheese

1tbsp chopped fresh oregano (or 1 tsp dried)

½ tsp fresh ground pepper

½ tsp garlic powder

¼ tsp salt

1tbsp extra virgin olive oil

 

·        Preheat oven to 450˚F

·        Spray large baking sheet with oil cooking spray

·        Cut zucchini into slices (about 1 ½ inch by ¾ inch)

·        Toss in a bowl with the olive oil

·        Mix dry ingredients in a plastic bag

·        Place zucchini, a handful at a time, in the plastic bag & shake to coat

·        Bake 20 minutes

·        Turn zucchini, bake another 10-15 min., or until golden brown

 

Makes 4 Servings

Serve with creamy horseradish dip or your favourite dip.

Did you know? Although these vegetables can be hefty and substantial, they are actually composed of 95% water, therefore could be a refreshing raw addition to salads. When cooked or grilled, they exude moisture, so salt them and allow them to drain any excess water before cooking. Choose small, baby zucchini for the sweetest taste. Zucchini contain Vitamin C and lutein, which promotes eye health.
