Oatmeal Power Cookies

When you need a high-energy snack, try one of these.

 

Oatmeal Apple 2001

 

1    cup whole wheat pastry flour or spelt flour

1    cup rolled oats

1    cup chopped dried fruit or fresh apples

1    cup raisins or currants

1    cup coconut flakes

½    teaspoon baking soda

1    teaspoon cinnamon

1    teaspoon allspice

½    cup mango puree (or apple sauce or banana puree)

¾    cup turbinado sugar

½    cup maple syrup

1    teaspoon vanilla extract

Preheat oven to 350 degrees. Oil a cookie sheet and set aside. In a mixing bowl, place the flour, oats, fruit, raisins, coconut, baking soda, cinnamon, and allspice. Combine with a wire whisk. In a separate bowl, whisk together the mango puree, sugar, maple syrup, and vanilla. Pour the dry ingredients into the wet ingredients. Using plastic bags on your hands, or a spatula, combine until well mixed. Using a one-ounce scoop, place the cookies on the oiled baking sheet and bake for 15 minutes or until golden brown.
