Garlicky Tomato and Sausage Soup

A Family Favourite

 “Add a small sandwich for a light, healthy lunch.”

 

 

 

  8        regular tomatoes

  1        onion (preferably sweet)

  2        hot Italian sausages (optional)            

  1        head garlic

 ¼        cup (50 mL or 2 TBSP) olive oil

  1        tsp (5 mL) salt

  2        tsp (10 mL) Italian seasoning (i.e. oregano)

½         tsp (2 mL) smoked or regular paprika

10        oz (284 mL) can undiluted chicken broth (chicken stock/vegetable stock/water)

*         Sprigs of fresh thyme or basil (optional)

 

· Preheat oven to 230 C (450 F)

· Cut tomatoes & onions into wedges

· Slice sausages into quarters

· Slice off top of garlic head, leaving cloves intact

· Tumble sausages, garlic, and vegetables together

· Drizzle with oil, sprinkle with seasoning, and stir

· Roast in oven until lightly charred—40 to 50 min

· Stir & rotate halfway

· Place tomatoes & onions in food processor

· Squeeze in garlic & discard skins

· Whirl until fairly smooth

· Pour into a saucepan along with broth and boil

· Slice sausages and scatter into soup along with thyme

 

          Keep covered and refrigerated for up to two days

 

Did you know?  Besides being the super ingredient, appearing in everything from pasta, pizza, and Bloody Marys, tomatoes are now recognized as a possible weapon against cancer.  Tomatoes contain lycopene (which gives them its red colour), which has been linked to a reduced risk or developing various deadly cancers.
